ITerm2 is a nice tabbed replacement for the default terminal app. When I'm done with a project I just pause each vm when I'm done and life goes on. My data scale is small enough that the perf hit for running a db in a VM isn't significant. Some clients use MySQL, some use Postgres, and I don't want to deal with running those natively. That way I don't gunk up my machine with daemons I've forgotten about and run into port conflicts and resource starvation. Each client has at least 1 vm housing my local version of their dev environment, source repo, and DB. I use VirtualBox for all of my consulting work.
